   Observed the following items cold holding above 41F in main kitchen sauce cooler, reach in cooler, and prep top cooler *see asterisks*. C/A: Cold held TCS items shall be maintained at 41F or below except during preparation, cooking, cooling, or when time is used as a public health control. COS: Eggs, blue cheese, and ranch were discarded. Chicken wings were moved to walk in cooler and cooled to 40F at 2:30pm. Corrected On-Site. New Violation.
