   Observed turkey sausage, pork tenderloin, and country ham in drawer cooler below flat top temping at above 41F. (see temp log) Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: Person in Charge (PIC) moved items further back in the cooler to cool down, items had been out for less than two (2) hours.
