   Equipment design and condition

   Observed cardboard used to line the floors in the walk-in cooler, and to line a table in the dry storage room. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. (C) Corrective Actions: PIC (Person in Charge) removed the cardboard from the walk-in cooler and the dry storage room.
