   Toxic substance storage and use

   Observed that the only in-use sanitizer bucket in the kitchen was at a concentration that exceeds the manufacturer's maximum concentration for quaternary sanitizer.// Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials used on food contact surfaces shall not exceed stated concentrations as listed on the EPA-registered label, in 40 CFR 180.940 and 40 CFR 180.2020, (100 ppm for chlorine and 400 ppm for quaternary ammonia). (P) Corrective Actions: The person in charge remade the sanitizer so that it was within the manufacturer's stated food safe concentration for quaternary sanitizer.//

   Observed that multiple wet wiping cloths left on the counter in between uses.// Cloths in-use for wiping counters and other equipment surfaces shall be stored in sanitizer of the appropriate concentration in-between uses and laundered daily. (C) Corrective Actions: The person in charge placed them in the sanitizer buckets in between uses.//
