Food separation and protection
Observed employee remove liquid from a wok into a bucket that was stored on the floor. Employee proceeded to lift bucket and pour liquid into 3-compartment sink by handling the bottom of the bucket that was in contact with the floor. Employee proceeded to engage in food preparation. If used, single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. (P) Corrective Actions: Had employee remove gloves. Employee washed hands.

Food storage areas outside of main kitchen area to have ceiling tiles changed also. Wall and ceiling covering materials shall be nonabsorbent, light colored, and attached so that they are easily cleanable.
