   Observed employee attempting to sanitize equipment in a high-temperature warewashing machine that only achieves a utensils surface temperature of 156F as measured by DeltaTrak thermometer. Irreversible temperature indicator provided by the person in charge showed that the utensil surface temperature did not reach 160F.// After being cleaned, equipment food-contact surfaces and utensils shall be sanitized in hot water mechanical operations by being cycled through equipment that is set up as specified under Rule .05(6)(e), (l), and (m) and achieving a utensil surface temperature of 160°F (71°C) as measured by an irreversible registering temperature indicator.
