PIC demonstrated how the facility sanitizes dining room tables by using one bucket of sanitizer solution and a single wiping cloth. COS - Inspector explained the approved methods for sanitizing dining room tables. CA: Dining tables must be sanitized by one of the following methods: 2 bucket system with wet wiping cloths (1st to debride food, 2nd to sanitize; both buckets must be sanitizer solution), a spray sanitizer with disposable paper towels, or pre-moistened disposable sanitizer wipes. Inspector observed sliced tomato and sandwich lettuce on Time as a Public Health Control (TPHC) without TPHC labels.
