There is no documentation in the facility for TPHC or that the parmesan cheese is shelf stable. COS- Discarded. Corrective action: TCS foods shall be kept at or below 41F or at or above 135F. Keep shaker cups of parmesan under refrigeration to maintain TCS food at or below 41F. Corrected On-Site. Repeat Violation.
