   Observed inconsistent discard time records for cooked pizzas stored in the pizza tower. Although a time log sheet is available, it is kept away from the pizza tower, and there is no clear identification indicating which recorded discard time corresponds to each pizza.

   Observed inconsistent discard time records for cooked pizzas stored in the pizza tower. Although a time log sheet is available, it is kept away from the pizza tower, and there is no clear identification indicating which recorded discard time corresponds to each pizza. As a result, employees cannot reliably verify the correct discard time for individual pizzas. CA: The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control; Discussed with PIC to develop a sticker marking system to for each pizza stored in pizza tower that indicated the 4 hour discard time. Repeat Violation.
