   Observed TCS food items stored inside the prep unit and reach in cooler underneath the prep table on the prep line of the kitchen, walk-in cooler, reach in coolers inside the sushi prep area stored above 41F. CA: Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: TCS food items were discarded, transferred into reach in coolers and stored on ice to maintain cold holding temperatures at 41F and below. Corrected On-Site. New Violation.
