Observed tofu stored horizontally in front of 2 pans of raw chicken in top compartment of prep top cooler 3 in main kitchen. C/A: All ready to eat foods must be stored above raw foods to prevent cross contamination. Ready to eat foods shall be stored behind raw foods when stored horizontally to prevent cross contamination.
