   Wiping cloth use and storage

   Observed wet, in-use wiping cloth out of its sanitizing bucket on the beverage prep counter in the front food service area. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration of 50 ppm to 100 ppm Chlorine.
