   Observed several TCS foods cold holding above 41F in reach-in cooler of main kitchen. C/A: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below COS: Per PIC, items were recently placed in cooler 30 mins prior from a delivery.

   Observed several TCS foods cold holding above 41F in reach-in cooler of main kitchen. C/A: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below COS: Per PIC, items were recently placed in cooler 30 mins prior from a delivery. Items were placed on ice and into the walk-in cooler to rapidly cool. Corrected On-Site. Repeat Violation.
