    Observed multiple containers of spices and working bottles of oil/sauce that were not labeled with the common name of the food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. (C) Corrective Actions: Containers and bottles were labeled.

    Utensil, equipment and linen storage

    Observed a stack of cleaned metal pans that were stacked wet. After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; (C) and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. (C) Corrective Actions: Pans were moved to the compartmented sink for re-washing.

    Observed an accumulation of grease and other debris on surfaces in the kitchen, including the inside tops of prep coolers, sides of a freezer next to the fryer, along the shields between fryers and on the vents above the fryers and grill. Non-food contact surfaces shall be cleaned at a frequency great enough to prevent accumulation of food residues. (C) Corrective Actions: Deep clean to remove accumulated grease and food deposits. Correct by 9/18/26.
