Wiping cloth use and storage
Observed multiple in-use wet wiping cloths stored in sanitizer buckets containing too low of a sanitizer concentration. Cloths in-use for wiping counters and other equipment surfaces shall be stored in sanitizer of the appropriate concentration in-between uses and laundered daily. (C) Corrective Actions: Employees remade the sanitizer buckets to contain an adequate concentration of chlorine.

Clean equipment and utensils shall be stored in a self-draining position that allows air drying and covered or inverted. (C) Corrective Actions: Dishes were just washed so PIC (Person in Charge) reorganized the dishes in a way that allows them to properly air dry.
