   Observed a large container of Horchata, one large container of Salsa, and one large container of rendered beef fat that were being held higher than 41° F for more than four hours. ( See Temp Chart)// Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: The Horchata, one large container of salsa and the large container of rendered beef fat were discarded.//
