Except as specified in paragraphs (g)2 and 3 of this subsection and except for whole, raw fruits and vegetables that are intended for washing by the consumer before consumption, raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form. Observation: Dining room cooler and Frigidaire cooler holding time/temperature control for safety foods (cream cheese, butter, yogurt) is unable to maintain the products at 41F. CA: 1. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. Discussed with the manager to discontinue the use of the GE cooler for (butter, milk, cream cheese, yogurt) and to place the named products in the freezer for storage and ~1-2 hours prior to breakfast to place in the dining room cooler. However, if the products are still unable to hold at 41F or below, the unit(s) must be replaced with commercial coolers. Use a temperature log to check the readings of the coolers and product.
