CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food (TCS) shall be maintained at 41°F (5°C) COS: The foods that were cooling inside of the RIC were removed and placed in the walk in cooler to cool down.

CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food (TCS) shall be maintained at 41°F (5°C) COS: The foods that were cooling inside of the RIC were removed and placed in the walk in cooler to cool down. TCS foods that were stored inside the cooler and not prepared on this day were discarded. Corrected On-Site. New Violation.
