When the scoop was wiped with a clean alcohol swab, the stains rubbed off on the swab. Observed plates stored upright, allowing for dust build up inside of plate CA: Equipment food-contact surfaces and utensils shall be cleaned: At any time during the operation when contamination may have occurred COS: Each item mentioned was cleaned and ran through the dishwasher.
