C/A: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: Bar gun cleaned and sanitized; dishes moved to 3-compartment sink to be cleaned and sanitized. Observed several prepackaged TCS food items (2-containers of sour cream -expiration: 7/6/26 and 3/2/26, ranch dressing -expiration: 5/2026, and whipped cream - expiration: 2/6/2026) held beyond manufacturer's use by dates in refrigerator 2 in main kitchen. 2. Observed prepackaged shredded cheddar, mozzarella cheese, and pepperoni stored in refrigerator 1 in main kitchen without date mark. Per manufacturer's instructions on package, cheese must used within 7-days. C/A: Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date, use by date, or the sell-by date. COS: All discarded. Corrected On-Site. New Violation.
