   Observed sanitizer bucket in front food service area and sanitizer bucket in the main kitchen with a QUAT concentration of 0ppm. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n) (QUAT 200-400ppm).

   Observed sanitizer bucket in front food service area and sanitizer bucket in the main kitchen with a QUAT concentration of 0ppm. COS: Sanitizer buckets remade to 50 ppm chlorine. Corrected On-Site. Repeat Violation.
