Shall be air-dried or used after adequate draining before contact with food; (C) and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. (C) Corrective Actions: Cups and containers were moved to warewashing for re-cleaning and sanitizing.

Observed light covers over the grill that were covered in dust. Observed pans in the kitchen with a thick buildup of encrusted grease. Observed shelving over a prep cooler in the kitchen that had an accumulation of dust. Observed that the external surfaces of the prep coolers in the kitchen had areas that were covered with food residue and debris.
