    Inspector observed high temperature dish machine with a maximum temperature of 147F degrees plate level. COS- 3-compartment sink was already set up with 200-400 ppm QAC. Advised PIC to use 3-compartment sink for wash, rinse, and sanitize. Corrective Action: the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be less than 180ºF. Corrected On-Site. New Violation.
