    Observed an employee drinking tea from a mug in the kitchen area at the prep table while preparing food. CA: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS: Employee voluntarily removed the mug away from the kitchen and sanitized the surface area where the mug was sitting. Corrected On-Site. New Violation.

    Observed an employee rinse a plastic container with the pre-rinse sprayer and place it in the air-drying area without washing and sanitizing the container. CA: After being cleaned, equipment food-contact surfaces and utensils shall be sanitized at a contact time of at least 30 seconds for other chemical sanitizing solutions (such as QUAT). COS: PIC properly set up the three-compartment sink and proceeded to wash the container following the required three-step process: washing, rinsing, and sanitizing. Corrected On-Site. New Violation.
