    Maintenance and Operation. (a) Good Repair. All physical facilities shall be maintained in good repair.(b) Cleaning, Frequency and Restrictions. 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. 2. Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing. At the time of inspection, walls were observed encrusted with old food residue and floors behind cooking equipment were observed encrusted with grease and food residue all in the front food prep and service area. Additionally, ceiling were observed with a heavy accumulation of dust particles above three compartment sink and dry food storage shelves. Person in Charge was advised to clean the walls, floors and ceilings on a frequent schedule to avoid accumulation and send pictures to inspector by 10/13/2026 via email. New Violation.
