Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. At the time of inspection sliced sausage tested at 46F in top area of prep top cooler in kitchen. As per food worker said food item was removed from walk in cooler , sliced and placed in prep top cooler 24 hours prior to inspection. Corrected on Site: Food was discarded by food worker. Corrected On-Site. New Violation.
