C/A: Cold held TCS items shall be maintained at 41F or below except during preparation, cooking, cooling, or when time is used as a public health control. COS: Pupusa fillings were moved to walk in cooler and cooled to 41F. Pico de gallo, sliced tomatoes, and shredded lettuce were discarded. Corrected On-Site. New Violation.
