Observed small prep top by steam table holding several sliced cheeses( white, yellow, swiss, and provolone) overfilled holding above 41F. Observed butter on counter top in main kitchen by prep sink holding above 41F C/A- Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below COS- All items in prep bottom in front grill bottom discarded. Prep top items ( chicken, tomatoes, cheese) were placed at 10:00 am, PIC removed items and placed in RIF for rapid cooling. Small prep top cheeses discarded. Corrected On-Site. Repeat Violation.
