   Wiping cloth use and storage

   Observed 2 buckets of wiping cloths sitting in sanitizer at concentrations below 50ppm. Cloths in-use for wiping counters and other equipment surfaces shall be stored in sanitizer of the appropriate concentration in-between uses and laundered daily. (C) Corrective Actions: Sanitizer buckets were remade to an appropriate concentration for chlorine sanitizer.

   Observed multiple cellphones on multiple prep surfaces throughout the kitchen during the first walk-through. Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur. (C) Corrective Actions: Cell phones were removed and placed in the office.
