   Inspection item: Proper cold holding temperatures

   Observed multiple TCS food items being held above 41F in the walk-in cooler. Observed turkey (2) at 45F and whole ham at 46F. C/A: Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. Have WIC serviced and repaired to maintain proper temperature. PIC placed items on ice until cooler is repaired. Corrected On-Site. New Violation. Correct By: 07/24/2026
