   Observed a prep top holding tomatoes (50F), shredded american cheese (43F), Bleu cheese (43F), and lettuce (53F above 41F. Observed chicken in a main kitchen RIC at 45F. Observed horseradish (46F) and mayonnaise (46F) in a main kitchen prep top above 41F. CA: Advised PIC that due to the cold holding issues and variable service levels to place the prep tops under TPHC and restock using back storage until the units are fixed. New Violation.
