    Observed employee wear single-use gloves while working with ready-to-eat food (dumplings), once finished, he then grabbed his phone out of his pocket to check on something, and then the employee was about to grab the same tray of with dumplings. CA: Single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation.

    Observed employee wear single-use gloves while working with ready-to-eat food (dumplings), once finished, he then grabbed his phone out of his pocket to check on something, and then the employee was about to grab the same tray of with dumplings. CA: Single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. COS: PIC reminded the employee that personal items such phones cannot be used while working in the kitchen. PIC also instructed the employee to wash their hands and put on new pair of gloves before proceeding with food preparations. Corrected On-Site. Repeat Violation.

    Observed a reach in cooler used to store dumplings not able to reach temperatures of 41F or below. CA: Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperatures as specified under DPH Rule 511-6-1-.04 COS: All dumplings stored in this reach in cooler were moved into a walk in cooler.

    Observed a reach in cooler used to store dumplings not able to reach temperatures of 41F or below. CA: Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperatures as specified under DPH Rule 511-6-1-.04 COS: All dumplings stored in this reach in cooler were moved into a walk in cooler. Only two types of dumplings were thawed out while most were still frozen. Discussed with PIC to repair the cooler and until it is repaired to store dumplings in reach in cooler. Corrected On-Site.
