    Observed chlorine sanitizer in ware washing machine reading below 50ppm while being used during inspection. Observed quats sanitizer in sanitizing bucket used to wipe counters at 100 ppm. CA: Chlorine concentrations shall be between 50ppm and 100ppm to properly sanitize utensils and equipment. Quaternary Ammonium concentration levels must be between 200 ppm to 400 ppm unless stated on the product that it can sanitize effectively at a different level of concentration and is EPA approved. COS: The unclean utensils were placed near 3-comp sink to be washed, rinsed, and sanitized. PIC told employees not to use ware washing machine until it is repaired. The sanitizer bucket was made again to a concentration of 200 ppm. Corrected On-Site. Repeat Violation.

    Observed multiple TCS foods inside of the two door reach in cooler in the main kitchen cold holding at improper temperatures (see temperature log). Observed the ambient temperature for the two door reach in cooler to be above 41F. CA: Time/temperature control for safety foods must cold hold at a temperature of 41F or below. COS: The TCS foods that were at the incorrect temperatures were discarded. The cooler temperature was lowered, and any TCS foods that were at the correct temperatures were place in a working cooler or in the freezer. Discussed with PIC that the cooler temperatures should be lowered to a degree at or between 37F and 39F. Corrected On-Site. New Violation.

CA: Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing. COS: The trash cans were attracting the the flies. The trash was taken out and the flies were no longer seen in the kitchen. Corrected On-Site. Repeat Violation.
