Observed grease accumulated under cooking equipment. Observed grease accumulated on kitchen floor. Observed wall soiled with accumulated grease. Observed wall soiled with accumulated food debris. Observed red and yellow sauce bottles with accumulated food debris on the exterior surfaces. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations.
