Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. Use of the ice machine is to stop until the ice machine has been emptied and cleaned. New Violation.     Observed several wet wiping cloths stored on top of the ice cream freezers in the main kitchen. 2. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. Wiping cloths are to be kept in a sanitizer solution, in-between uses. Wiping cloths were removed from on top of the ice cream freezers in the main kitchen. Corrected On-Site. New Violation.
