COS- food was discarded and employees were told no TCS foods shall be stored at the bottom until cooler is repaired. Ice baths on top are allowed as long as food is maintained at 41F or below. 511-6-1.04(6)(f) - Time/Temperature Control for Safety; Cold Holding (P) (f) Time/Temperature Control for Safety Food, Hot and Cold Holding.
