CA: A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment.

    PIC could not present to me a vomit/diarrhea clean up kit, disinfectant, or procedure. CA: A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. COS: Walked with PIC to the storage area in the back of Kroger and found an orange disinfectant that the EPA certified and effective against norovirus. PIC must now type up a procedure for disinfecting areas after a vomiting or diarrheal event and post it for all employees to see. Corrected On-Site. New Violation.

Two TCS products inside cold holding at temperatures above 41F. (See temperature log for details). CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: The two TCS items for discarded, most of the other items in there were unopened and do not yet become TCS until after opening. Those items were placed in the working cooler. Corrected On-Site. New Violation.
