Lunch service ended while inspector was still at facility and PIC confirmed that recorded temperatures at 10am were 34F. Instructed PIC to place milk in walk in freezer to rapidly cool down to 41F prior to placing in RIC in main kitchen. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below Corrected On-Site.
