Upon checking, the low 1 door cooler (near drink station) ambient temperature was at 44 and the 2 drawer cooler ambient temperature was at 48F.

    Observed multiple TCS foods (coleslaw, raw sliced ham, shredded cheese, shredded lettuce) cold holding at temperatures above 41F (see foods marked with asterisks in temperature log). Upon checking, the low 1 door cooler (near drink station) ambient temperature was at 44 and the 2 drawer cooler ambient temperature was at 48F. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. COS: PIC discarded all noted TCS foods that were cold holding above 41F. Advised PIC not to hold TCS foods/beverages in the affected coolers until they are serviced and holding at 41F or lower. Corrected On-Site. New Violation.
