    Observed milk in the front service milk cooler holding above 41F. See * in temperature log. PIC informed that the milk cooler has been having issues. Observed an ambient temperature of 44F in the milk cooler. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above. COS: PIC placed milk in an ice bath. CORRECT BY: Cooler must be repaired to hold TCS foods at 41F or below. Cooler should be able to keep foods at 41F or below while in use. Evidence of cooler correction must be sent to inspector no later than Monday, 9/21/2026. Milk must be kept on ice or in an adjacent cooler until milk cooler has been repaired. Corrected On-Site.
