    Observed multiple TCS foods items cold holding at temperatures above 41F, located in the Large Prep Top Cooler (see temperature log - foods marked with asterisks). Observed the ambient temperature of the Large Prep Top Cooler at 48F. PIC stated the TCS foods had been in the top of cooler had been stocked this morning. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. COS: PIC had employees put all TCS foods in top part of cooler on an ice bath. TCS foods stored in cooler overnight were discarded. Advised PIC not to use the cooler to hold TCS foods until the cooler has an ambient temperature below 41F (ideal ambient temperature is between 36F-38F). Corrected On-Site. New Violation.
