    Observed 8 boxes of ice cream base (6 sweet cream, 2 chocolate) cold holding above 41F (see temperature log). Ambient temperature of cooler was 65F at time of inspection, PIC and staff were unsure how long the cooler had been holding above 41F, ice cream bases were delivered 7/21/26. CA: time/temperature control for safety food shall be maintained at 41°F (5°C) or below COS: PIC voluntarily discarded all TCS foods in walk-in cooler (8 boxes of ice cream base) and called repair person. PIC moved foods refrigerated for quality to other working coolers/freezers. PIC to send proof of repair to inspector by 7/27/26 Corrected On-Site. New Violation. Correct By: 07/27/2026
