    Observed quat sanitizer being used in warewashing machine (ADS ET Series) designed for chlorine sanitizer. (Data plate on outside of machine states "required 50ppm available chlorine"). CA: A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions. Correct by 6/27/26 - send proof of correction to inspector email Until low-temp, chlorine sanitizer for it is acquired, sanitize dishes in 3-comp sink and allow to air dry after washing in ware-washing machine. Rinse machine a few cycles before use and use primer switch and test strips to ensure chlorine is running through the machine. New Violation. Correct By: 06/27/2026
