    Observed multiple TCS Food items cold holding above 41F in the prep top cooler and bottom cooler in the grill prep area (See asterisked items for specifics). CA: TCS food items that are cold holding shall be 41F or below. COS: Elote cheese was discarded by food employee. Per PIC, lettuce, tomatoes, and queso fresco were prepared at a time frame that allowed for cooling. Lettuce cooled down to 39F and the tomatoes and queso fresco cooled to 40F. New Violation.
