    Observed cut watermelon and cut honeydew melon cooling at a rate that would not reach 41F within the proper amount of time in the main kitchen front walk-in cooler. Observed sliced turkey cooling at a rate that would not reach 41F within the proper amount of time in the prep kitchen walk-in cooler. CA: Time/temperature control for safety food shall be cooled within 4 hours to 41°F (5°C) or less if prepared from ingredients at ambient temperature. COS: Facility still has 1 hour to cool watermelon and honeydew melon. Both were placed in ice baths in the main kitchen front walk-in cooler for rapid cooking. Sliced Turkey was discarded. Corrected On-Site. New Violation.
