The inspector observed an employee turn off the handwashing sink faucet with bare hands after washing their hands, then handle pizza ingredients in the main kitchen. [2]
The report states: “PIC was unable to provide in a verifiable manner that all employees have been informed of their responsibility to report about their health and activities as they relate to food borne illnesses.” [3]
A separate finding described quat concentration at 3 compartment sink (main kitchen) is at 0ppm in main kitchen C/A: Manual and Mechanical Warewashing Equipment, Chemical Sanitization - A quaternary ammonium compound solution shall have a concentration as specified in DPH Rule 511-6-1-.07(6)(g).
