C/A: In a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 194ºF, or less than for a stationary rack, single temperature machine, 165ºF. COS: PIC not using dish machine until repaired. Maintenance technician able to repair while on site. New reading 180ºF. Corrected On-Site. New Violation.
