    Observed tilapia, whitening, ham, sour cream and Mexican cheese stored inside the walk in cooler maintaining cold holding temperatures above 41F. The ambient air temperature of the walk cooler was holding at 50F. Containers of blue cheese and cocktail sauce stored inside the refrigerator on the front prep line held cold holding temperatures above 41F. Fried rice stored inside the reach in cooler drawer underneath the grill held temperatures above 41F. CA: Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: TCS food items stored inside the walk in cooler and the refrigerator was discarded. The rice stored inside the reach in cooler drawer was discarded. Corrected On-Site. Repeat Violation.
