   Reheating for hot holding

   Observed cooked rice reheating in the microwave (for hot holding) that only reached 114F in the center of container. Except foods that have been commercially processed and packaged in a food processing plant, time/temperature control for safety food reheated in a microwave oven for hot holding shall be reheated so that all parts of the food reach a temperature of at least 165°F (74°C) and the food is rotated or stirred, covered, and then allowed to stand covered for 2 minutes after reheating. (P) Corrective Actions: PIC (person in charge) had rice placed back into microwave to reach 165F.

Food service establishment or manufacturers' dating information on foods may not be concealed or altered. (C) 3. The permit holder shall notify consumers by written notification of the presence of major food allergens as an ingredient in unpackaged food items that are served or sold to the consumer. (C) Corrective Actions: Facilit hand wrote all allergens on-site and posted for public.
