   Hot holding temperatures

   Cooked chicken nuggets were sitting on countertop after cooking. Intention is to keep them there until an order is placed, then they refry them (see temp log). Time/temperature control for safety food shall be maintained at 135°F (57°C) or above. (P) Corrective Actions: Time control was discussed with person in charge, as was cooling methods if they are going to continue to keep the chicken on the countertop like this.
